Meet the Team

  • Fernando Peire

    Fernando Peire was educated at The Latymer School in London and at Manchester University. Fernando joined the board of Caprice Holdings in March 2007 and is Director of the Ivy Restaurant and The Ivy Club. He joined the Ivy in 1990 as Senior Maitre d.
    Fernando recorded two television series of The Restaurant Inspector with Fresh One Productions. Fernando started drying dishes in a restaurant when he was sixteen; he still clears the odd table now.

  • Adam Sutton
    Head Chef

    At sixteen, Adam took an apprenticeship in the kitchens of The United Oxford and Cambridge University Club in Pall Mall London, where he was heavily influenced by Head Chef, Ted McGee and Sous Chef, Stuart Littlejohn.
    In 2002, he joined The Ivy team as Demi Chef de Partie and worked his way up to Senior Sous Chef, working under Executive Chef, Gary Lee. In April 2013, Adam was promoted to Head Chef at The Ivy Club.

  • Tim Nidai
    Senior Sous Chef

    Tim was born and raised in Hackney and has lived there all of his life after his great Grandad moved to London from Cyprus.
    Tim started with Caprice Holdings at Sheekey’s in 2000 as a commis and this was his first year cheffing. He then headed to The Ivy in 2004 for six years and it was here where he met Head Chef, Adam and they worked together in The Ivy private dining room kitchen. In 2010 he returned to Sheekey’s for a year and then took some time out to go travelling. Tim then worked for the Olympics cooking for media professionals before heading to Scott’s as a sous chef. Finally, he joined The Ivy Club in 2013 and is currently Senior Sous Chef.
    Tim enjoys spending time with his two children and has a passion for travelling, particularly around South East Asia. He loves to feed Marie-Claire in the office too, even when she is already full.

  • Demetris Sakallis
    Junior Sous Chef

    Demetris was born and raised in Surrey but is of Greek Cypriot heritage. He started at The Club as an apprentice in 2014 whilst studying at Westminster Kings College. Demetris was mentored by both Adam and Tim and is now currently Junior Sous.
    Demetris always knew he wanted to be a Chef since a very young age and outside of work he enjoys experimenting with food and has a keen interest in molecular gastronomy.

  • Gaurav Raje
    General Manager

    Gaurav worked for Gordon Ramsay restaurant for two years before joining The Ivy Club. Prior to that he worked for the Sheraton Group and has a BSc (Hons) in Tourism and Hospitality Management from the University of Sunderland.
    Gaurav recently became a father and is already planning to train his son, Dhruv, how to be the next Sachin Tendulkar. 

  • Sam Evans
    Assistant Club Manager

    Originally from Portsmouth, Sam moved to London in 2015 with 6 years of hospitality experience under his belt, after being offered a role at The Ivy Club.
    Having managed student bars with capacities of 1,000, and working as Bar Manager at Naval base HMS Collingwood in Portsmouth, Sam decided it was time to steer away from bars and nightclubs and head for a career in high-end hospitality, and he knew London was where he needed to be.  
    After only working at the Club for a year and a half, Sam impressively rose through the ranks from floor waiter to Duty Manager. 
    Sam is well known for his friendly demeanor and his love for funk and soul music. You will often find him blaring out Stevie Wonder, Marvin Gaye, and other classic Motown hits, and wonder whether he was born in the wrong decade!

  • Josune Zorrilla De La Fuente
    Assistant Club Manager

    Josune is as flamboyant as she is delightful. A fiery Spaniard hailing from the Basque country – the current culinary hotspot famous for its wine and Pintxos.
    For one so experienced in the art of hospitality (having worked in various renowned establishments including Sexy Fish and the Michelin starred Indian restaurant Trishna in Marylebone), it might surprise you to hear that her favourite is actually Kalimotxo - a mixture of red wine and coca cola. She likes to drink it by the pint.

  • Oscar Skinner
    Assistant Club Manager

    Although born in England, Oscar was raised for most of his life in the Bordeaux region of France. He attended the Lycee de Perigueux to study landscape design where he found his main focus in modern garden design. In 2013, Oscar returned to England alongside his brother and the duo began their hospitality careers at The Ivy Club.
    Whilst maintaining his landscaping interests by taking on local gardening jobs in North London, Oscar rose through the ranks from commis to become Duty Manager in October 2015, and Assistant Club Manager in 2019.

  • Ciro Leone
    Bar Manager

    Ciro moved to London from Napoli in 2013, aiming to elevate his two passions; music and drinks.
    Ciro is a classical trained pianist and owner of a Cocktail Bar in the best hotspot in Napoli, he joined the Club in 2013 as a barback and worked his way up to Head Bartender.
    Ciro is a Whisky lover (especially Irish) and a stubborn supporter of his hometown football team.
    Outside of The Club you can find Ciro playing the piano in solo performances in Central London or DJing in small parties around the town. Don’t talk about his hair.

  • Charlotte Garbett
    Member Events Manager & Assistant to The Director

    Charlotte joined The Club in August 2017 as the Office and Events Assistant. Having graduated from Oxford Brookes with a Business Information Systems BSc Honours degree, she went straight to work in events for a few years.
    Charlotte then moved on to work for the NHS for a few years before heading back into events as she knew this was the path for her.
    You may think Charlotte looks a lot like Emily the Membership Manager, don’t be fooled, they are identical twin sisters with an identical palate for rosé wine.


  • Emily Garbett
    Membership Manager

    Emily graduated from Oxford Brookes University with a degree in International Hospitality Management. During her time at university Emily completed a placement year at Lancaster London Hotel as a Food and Beverage Assistant rotating through several departments from events to restaurants.
    After finishing her degree, Emily joined the team at The Ivy Club in August 2014 as Membership Secretary before becoming Membership Manager in June 2016.
    Emily enjoys all forms of rose, by the glass or bottle.

  • Charlie Kirk
    Reception Manager

    Charlie is originally from London but was banished to boarding school in the far reaches of Scotland at the age of 13. When he eventually escaped he swapped the whisky trail for the Devon coast, attending Exeter University and graduating in Classics which explains his love for the finer things in life. This passion for great food, wine and people is what led him to The Ivy Club in the first place.
    Since he joined he has worked on the front desk at the restaurant next door, planned member events and spent his time getting to know as many of our esteemed clientele as possible. He can often be found in The Piano Bar catching up with regulars and enjoying the jazz trio on a Friday night.

  • Laurence Beal

    Laurence is currently studying Classical Studies with English Literature at King’s College London and is a member of the National Youth Theatre.
    He loves writing, acting and any outdoor activity you can think of. His half Welsh side really comes out of him when watching the 6 Nations rugby.
    If you’re up for a hike, you can bet he is too.

  • Zelda

    Zelda was born in North Wales in February 2017. She has been at The Ivy Club since June 2017 and is based mainly in the Club office. She is generally here from Monday to Friday, preferring to spend weekends visiting local parks and making new friends. She hosts her annual Santa Paws party in the Loft at Christmas.
    In her spare time Zelda likes to watch television programmes involving dogs or snooker.
